Amaranto e seus benefícios

O amaranto é uma planta cujas folhas são utilizadas como
verdura em alguns países da América desde época remota. Desta forma o
objetivo desta pesquisa foi buscar informações em diversas pesquisas
para verificar a importância deste pseudocereal na alimentação humana.
Esta foi realizada por meio de pesquisa em artigos científicos e livros.
Foi realizado um levantamento de dados no período de agosto de 2011 a
fevereiro de 2012. O referencial teórico teve como foco a adaptação do
grão de amaranto feita pela Embrapa aos solos e clima brasileiros.
Apresentou-se como base de interlocução, autores como, Amaya-Farfan,
Marcílio e Spehar (2005). O aprofundamento teórico trouxe como
reflexão a possibilidade de utilizar o amaranto em produtos destinados às
pessoas com doença celíaca. Os principais resultados mostram que o
amaranto não contém glúten, é possível elaborar produtos convencionais
utilizando a farinha de amaranto. Evidencio-se desta forma que o
amaranto apresenta qualidades agrícolas e nutricionais, e que seria
interessante o incentivo ao plantio e consumo deste grão em nosso país.
